Ingredients

  • 1 large beet, roasted and peeled
  • 4 oz of feta cheese
  • 1/2 cup of plain Greek yogurt
  • 1 garlic clove, minced
  • 1 tbsp of lemon juice
  • Salt and pepper, to taste
  • 2 tbsp of chopped fresh parsley, for garnish

Instructions

  1. In a food processor, pulse roasted beet until finely chopped.

  2. Add feta cheese, Greek yogurt, garlic, lemon juice, salt, and pepper. Pulse until smooth and creamy consistency.

  3. Serve with your favorite vegetables or pita chips. Garnish with chopped fresh parsley.
