Ingredients

  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 3 potatoes, diced
  • 2 cans diced tomatoes
  • 2 cups fish stock
  • 1 lb white fish fillets
  • 1 cup heavy cream
  • Salt and pepper, to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat and add the onion and garlic. Cook until translucent.

  2. Add the potatoes, canned tomatoes, and fish stock. Bring to a simmer, and cook for 20 minutes until the potatoes are tender.

  3. Add the fish fillets and cook for another 5 minutes until cooked through.

  4. Stir in the heavy cream and season with salt and pepper.

  5. Serve hot with fresh parsley garnish.
