How To Make Fish and Leek Chowder Recipe

Serves:

Ingredients

  • 1 lb. of white fish fillets, cut into small pieces
  • 2 leeks, sliced
  • 2 tbsp of butter
  • 2 garlic cloves, minced
  • 2 cups of chicken or fish broth
  • 1 cup of heavy cream
  • 2 tsp of cornstarch
  • salt and pepper to taste
  • chopped fresh parsley, for garnish

Instructions

  1. In a large pot, melt butter over medium heat. Add garlic and leeks and cook until leeks are tender, about 5 minutes.

  2. Add fish and broth, and bring to a boil. Reduce heat to low, cover and simmer until fish is cooked through, about 10-15 minutes.

  3. In a small bowl, whisk together heavy cream and cornstarch until smooth. Add mixture to the pot and stir until well combined.

  4. Cook until the soup thickens and comes to a gentle boil, stirring constantly for about 5 minutes.

  5. Season with salt and pepper to taste.

  6. Serve hot, garnished with chopped parsley.
