Ingredients

  • 1 lb white fish fillets, cubed
  • 1 large fennel bulb, diced
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 3 cups chicken or fish broth
  • 1 cup heavy cream
  • 2 tbsp olive oil
  • 2 tbsp all-purpose flour
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, sauté fennel and onion in olive oil until soft.

  2. Add garlic and flour, and stir until coated.

  3. Pour in broth and bring to a boil.

  4. Add fish and thyme, and simmer until fish is cooked through.

  5. Stir in heavy cream and season with salt and pepper.

  6. Serve hot and enjoy!
