A hearty creamy chowder with tender chunks of fish and crispy bacon in every bite.

Preparation: 15 minutes
Cooking: 45 minutes
Total: 1 hour

Serves:

Ingredients

  • 4 slices of bacon, diced
  • 1 tbsp unsalted butter
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 cups water
  • 2 cups whole milk
  • 1 lb Yukon gold potatoes, peeled and diced into 1/2-inch cubes
  • 1 tsp dried thyme
  • 1 bay leaf
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 lb firm white fish (such as cod or halibut), cut into 1-inch pieces
  • 1/4 cup heavy cream
  • 2 tbsp chopped fresh parsley

Instructions

  1. In a large pot or Dutch oven, cook the diced bacon over medium heat until crispy, about 5-7 minutes. Remove with a slotted spoon and set aside.

  2. Add the butter to the pot and melt. Add the chopped onion and cook until translucent, about 5 minutes. Add the minced garlic and sauté for another minute.

  3. Add the water, milk, diced potatoes, thyme, bay leaf, salt, and black pepper. Bring to a simmer and cook until the potatoes are tender, about 20-25 minutes.

  4. Add the fish to the pot and cook for another 5-7 minutes, until the fish is opaque and cooked through.

  5. Stir in the heavy cream and chopped parsley. Taste and adjust seasoning as needed.

  6. Serve hot with the reserved bacon sprinkled on top.
