How To Make Enoki Mushroom and Rice Bowl Recipe
A healthy and flavorful rice bowl made with enoki mushrooms.
Serves:
Ingredients
- 2 cups cooked brown rice
- 1 tbsp vegetable oil
- 2 cloves garlic, minced
- 1 small onion, chopped
- 8 oz enoki mushrooms, trimmed and separated
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 1 tbsp water
- 1 tbsp cornstarch
- 2 green onions, chopped
- sesame seeds for garnish
Instructions

In a large skillet, heat the vegetable oil over medium heat. Add garlic and onion and stir-fry until fragrant.

Add enoki mushrooms and stir-fry for 2 – 3 minutes.

In a small bowl, mix soy sauce, rice vinegar, sesame oil, water and cornstarch.

Pour the sauce into the skillet and stir until the sauce thickens.

Divide the brown rice into 4 bowls and top with the enoki mushroom stir-fry.

Garnish with chopped green onions and sesame seeds.
