Ingredients
- 2 bell peppers, sliced
- 1 large zucchini, sliced
- 1 large red onion, sliced
- 2 cups cherry tomatoes
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon chili powder
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon paprika
- Salt and pepper, to taste
Instructions

Preheat the oven to 425°F (220°C).

In a large mixing bowl, combine the bell peppers, zucchini, red onion, cherry tomatoes, garlic, olive oil, chili powder, cayenne pepper, paprika, salt, and pepper. Toss to coat the vegetables evenly.

Spread the vegetables in a single layer on a baking sheet.

Roast in the preheated oven for 25-30 minutes, or until the vegetables are tender and slightly charred, stirring once halfway through.
