Ingredients

  • 4 cups mixed vegetables (zucchini, bell pepper, onion, carrots)
  • 2 tbsp harissa paste
  • 2 tbsp olive oil
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 400°F.

  2. Cut the vegetables into bite-sized pieces and place them in a bowl.

  3. Add the harissa paste, olive oil, salt, and pepper. Toss well to combine.

  4. Spread the vegetables evenly on a baking sheet lined with parchment paper.

  5. Roast in the oven for 25-30 minutes or until the vegetables are tender and slightly charred.

  6. Serve hot.
