Ingredients
- 1 pound carrots, peeled and cut into sticks
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 ounces goat’s cheese, crumbled
- 1/4 cup pomegranate seeds
- Fresh parsley, for garnish
Instructions

Preheat the oven to 425°F (220°C).

In a large baking dish, toss the carrots with olive oil, salt, and black pepper.

Spread the carrots in a single layer and roast for 20-25 minutes until tender and lightly browned, stirring halfway through.

Remove from the oven and let cool slightly.

Transfer the roasted carrots to a serving platter and sprinkle with crumbled goat’s cheese and pomegranate seeds.
