Ingredients

  • 1 pound carrots, peeled and cut into sticks
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 ounces goat’s cheese, crumbled
  • 1/4 cup pomegranate seeds
  • Fresh parsley, for garnish

Instructions

  1. Preheat the oven to 425°F (220°C).

  2. In a large baking dish, toss the carrots with olive oil, salt, and black pepper.

  3. Spread the carrots in a single layer and roast for 20-25 minutes until tender and lightly browned, stirring halfway through.

  4. Remove from the oven and let cool slightly.

  5. Transfer the roasted carrots to a serving platter and sprinkle with crumbled goat’s cheese and pomegranate seeds.

  6. Garnish with fresh parsley and serve.
