Ingredients

  • 2 cups of broccoli florets
  • 4 boiled eggs, sliced
  • 1 cup of cooked quinoa
  • 2 tablespoons of miso paste
  • 1 tablespoon of honey
  • 1 tablespoon of rice vinegar
  • 1 tablespoon of sesame oil
  • 2 green onions, sliced
  • 1 tablespoon of sesame seeds

Instructions

  1. Steam the broccoli florets until tender-crisp, then rinse with cold water and set aside.

  2. In a small bowl, whisk together the miso paste, honey, rice vinegar, and sesame oil to make the dressing.

  3. In a large bowl, combine the cooked quinoa, sliced boiled eggs, steamed broccoli, and sliced green onions.

  4. Pour the miso dressing over the salad and toss everything together until evenly coated.

  5. Sprinkle sesame seeds on top for added crunch and flavor.

  6. Serve the salad chilled or at room temperature.
