How To Make Apricot & Pistachio Pavlova

Ingredients
- 4 egg whites
- 1 cup granulated sugar
- 1 teaspoon cornstarch
- 1 teaspoon white vinegar
- 1 teaspoon vanilla extract
- 1/2 cup chopped pistachios
- 4 fresh apricots, sliced
- whipped cream, for serving (optional)
Instructions

Preheat the oven to 250°F (120°C) and line a baking sheet with parchment paper.

In a large bowl, beat the egg whites until stiff peaks form.

Gradually add in the sugar, cornstarch, vinegar, and vanilla extract. Continue to beat until the mixture is thick and glossy.

Spoon the mixture onto the prepared baking sheet and shape it into a circle or oval, creating a shallow well in the center.

Bake for 1 hour, then turn off the oven and let the pavlova cool completely inside the oven.

Once cooled, carefully transfer the pavlova to a serving plate.

Top with sliced apricots and sprinkle with chopped pistachios.

Serve with whipped cream if desired.
