How To Make Steak & Blue Cheese En Croûte

  • 4 steak fillets
  • Salt and pepper, to taste
  • 4 tbsp blue cheese
  • 2 sheets of puff pastry
  • 1 egg, beaten
  • 1 tbsp olive oil


  1. Preheat the oven to 200°C (400°F) and season the steak fillets with salt and pepper.

  2. In a hot pan, sear the steaks for 1-2 minutes on each side, then set aside to cool.

  3. Roll out the puff pastry sheets on a floured surface and cut into squares large enough to encase each steak.

  4. Place a tablespoon of blue cheese in the center of each pastry square, then top with a steak fillet.

  5. Fold the pastry over the steak, sealing the edges with beaten egg.

  6. Place the wrapped steaks on a baking tray lined with parchment paper, brush with olive oil, and make a few small slits on top.

  7. Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown and the steak is cooked to your liking.

  8. Remove from the oven and let rest for a few minutes before serving.
