How To Make Soba Noodle & Edamame Salad with Grilled Tofu

Ingredients
- 8 ounces soba noodles
- 1 cup frozen edamame, thawed
- 1 block of firm tofu
- 2 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 1 tablespoon honey or maple syrup
- 2 green onions, chopped
- 1 small cucumber, sliced
- 1 carrot, julienned
- 1 tablespoon sesame seeds
Instructions

Cook the soba noodles according to package instructions. Drain and rinse with cold water.

In a bowl, whisk together the soy sauce, rice vinegar, sesame oil, and honey/maple syrup. Set aside.

Preheat a grill or grill pan over medium heat. Press the tofu to remove excess moisture and cut into thick slices.

Grill the tofu slices for about 3-4 minutes per side, or until grill marks appear. Brush with some of the soy sauce mixture while grilling.

In a large bowl, combine the cooked soba noodles, edamame, green onions, cucumber, and carrot. Pour the remaining soy sauce mixture over the salad and toss to combine.

Divide the salad into serving bowls and top each with grilled tofu slices. Sprinkle with sesame seeds.
