Ingredients

  • 1 sheet of puff pastry
  • 1 red pepper, roasted and thinly sliced
  • 1/4 cup walnuts, chopped
  • 3 oz goat’s cheese, crumbled
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

  2. Roll out the puff pastry on a lightly floured surface into a rectangle about 1/4 inch thick.

  3. Spread the roasted red pepper slices evenly over the puff pastry, leaving a 1-inch border.

  4. Sprinkle the chopped walnuts, crumbled goat’s cheese, dried thyme, salt, and pepper over the red peppers.

  5. Starting from one long side, tightly roll up the puff pastry, jelly roll style, until you reach the middle of the pastry.

  6. Repeat the same process from the other long side, making sure the two rolls meet in the middle.

  7. Slice the rolled pastry into 1/2-inch thick slices and place them cut-side down on the prepared baking sheet.

  8. Bake for 20 minutes or until the palmiers are golden brown and puffed.

  9. Allow the palmiers to cool slightly before serving.
