Ingredients

  • 4 slices of goat’s cheese (1 inch thick)
  • 1 cup of hazelnuts, finely chopped
  • 2 tbsp of flour
  • 2 tbsp of olive oil
  • 2 red onions, thinly sliced
  • 2 tbsp of balsamic vinegar
  • 1 tbsp of honey
  • Salt and pepper to taste
  • Arugula, for serving

Instructions

  1. Preheat the oven to 350°F (175°C).

  2. In a shallow dish, mix together the chopped hazelnuts and flour.

  3. Dip each slice of goat’s cheese into the hazelnut mixture, pressing gently to adhere.

  4. Heat the olive oil in a large skillet over medium heat. Add the sliced onions and cook until softened and caramelized, about 10 minutes.

  5. Stir in the balsamic vinegar and honey, and cook for another 2 minutes.

  6. Meanwhile, place the coated goat’s cheese slices on a baking sheet lined with parchment paper.

  7. Bake in the preheated oven for 12-15 minutes, or until the cheese is melted and the crust is golden brown.

  8. To serve, place a slice of baked goat’s cheese on each plate, and top with a spoonful of the balsamic onions. Sprinkle with salt and pepper to taste. Serve with a handful of arugula on the side.
