Ingredients
- 2 cups of mixed vegetables (carrots, bell peppers, zucchini, broccoli, cauliflower)
- 2 tablespoons of olive oil
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1 teaspoon of dried herbs (such as rosemary, thyme, or oregano)
Instructions

Preheat the oven to 425°F (220°C).

In a large mixing bowl, combine the mixed vegetables, olive oil, salt, black pepper, and dried herbs. Toss well to coat the vegetables evenly.

Spread the vegetables onto a baking sheet in a single layer.

Roast in the preheated oven for 25-30 minutes, or until the vegetables are tender and slightly charred, stirring once halfway through cooking.
