Ingredients

  • 2 cups of mixed vegetables (carrots, bell peppers, zucchini, broccoli, cauliflower)
  • 2 tablespoons of olive oil
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1 teaspoon of dried herbs (such as rosemary, thyme, or oregano)

Instructions

  1. Preheat the oven to 425°F (220°C).

  2. In a large mixing bowl, combine the mixed vegetables, olive oil, salt, black pepper, and dried herbs. Toss well to coat the vegetables evenly.

  3. Spread the vegetables onto a baking sheet in a single layer.

  4. Roast in the preheated oven for 25-30 minutes, or until the vegetables are tender and slightly charred, stirring once halfway through cooking.

  5. Remove from the oven and let them cool slightly before serving.
