How To Make Quinoa and Roasted Vegetable Salad

A hearty vegetarian salad packed with roasted vegetables and protein-rich quinoa.

  • 1 cup quinoa
  • 2 cups mixed vegetables (such as bell peppers, zucchini, and onion), chopped
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • Salt and pepper, to taste
  • 4 cups mixed greens
  • 1/2 cup crumbled feta cheese
  • 1/4 cup sliced almonds


  1. Preheat oven to 400°F.

  2. Rinse quinoa and cook according to package instructions.

  3. In a separate bowl, toss mixed vegetables with olive oil, garlic powder, oregano, salt, and pepper.

  4. Spread vegetables on a baking sheet and roast in the preheated oven for 20 minutes.

  5. In a serving bowl, mix cooked quinoa, roasted vegetables, and mixed greens.

  6. Top with crumbled feta cheese and sliced almonds. Serve immediately.
