How To Make Quinoa and Roasted Vegetable Salad
A hearty vegetarian salad packed with roasted vegetables and protein-rich quinoa.
Serves:
Ingredients
- 1 cup quinoa
- 2 cups mixed vegetables (such as bell peppers, zucchini, and onion), chopped
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp dried oregano
- Salt and pepper, to taste
- 4 cups mixed greens
- 1/2 cup crumbled feta cheese
- 1/4 cup sliced almonds
Instructions

Preheat oven to 400°F.

Rinse quinoa and cook according to package instructions.

In a separate bowl, toss mixed vegetables with olive oil, garlic powder, oregano, salt, and pepper.

Spread vegetables on a baking sheet and roast in the preheated oven for 20 minutes.

In a serving bowl, mix cooked quinoa, roasted vegetables, and mixed greens.

Top with crumbled feta cheese and sliced almonds. Serve immediately.
