How To Make Herbed Pork Fillet with Roast Vegetables

Ingredients
- 1 lb pork fillet
- 2 tbsp olive oil
- 2 cloves of garlic, minced
- 1 tbsp chopped fresh rosemary
- 1 tbsp chopped fresh thyme
- Salt and pepper to taste
- 4 cups mixed vegetables (carrots, potatoes, bell peppers, and zucchini), cut into chunks
- 1 tbsp balsamic vinegar
Instructions

Preheat the oven to 400°F (200°C).

In a small bowl, mix together olive oil, minced garlic, rosemary, thyme, salt, and pepper.

Rub the mixture all over the pork fillet until well coated.

Place the pork fillet in a baking dish and roast in the preheated oven for 25-30 minutes, or until cooked through and golden brown.

Meanwhile, toss the mixed vegetables with olive oil, salt, and pepper in a separate baking dish.

After 10 minutes of cooking the pork, add the vegetables to the oven and continue roasting until tender and slightly browned.

Remove the pork and vegetables from the oven and let them rest for 5 minutes.

Drizzle the roasted vegetables with balsamic vinegar and toss gently to coat.

Slice the pork fillet and serve with the roasted vegetables.
