How To Make Smoked Haddock & Creamed Corn Curry

Ingredients
- 1 lb smoked haddock fillets
- 2 tbsp vegetable oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 tbsp ginger, grated
- 1 tsp turmeric powder
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1/2 tsp chili powder
- 1 can (14 oz) creamed corn
- 1 cup coconut milk
- Salt, to taste
- Fresh cilantro, for garnish
- Cooked rice, for serving
Instructions

In a large skillet, heat the vegetable oil over medium heat. Add the chopped onions and sauté until they turn translucent.

Add the minced garlic and grated ginger to the skillet and cook for another minute, until fragrant.

In a small bowl, mix together the turmeric powder, cumin powder, coriander powder, and chili powder. Add this spice mixture to the skillet and cook for a minute to toast the spices.

Add the smoked haddock fillets to the skillet and cook for about 3-4 minutes on each side, until they are cooked through and flake easily.

Pour in the can of creamed corn and coconut milk. Stir well to combine all the ingredients. Reduce the heat to low and let the curry simmer for about 10 minutes, allowing the flavors to meld together.

Season with salt to taste. Serve the smoked haddock and creamed corn curry over cooked rice. Garnish with fresh cilantro.
