Ingredients

  • 2 cups pearl onions, peeled
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 cup milk
  • ½ cup heavy cream
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. In a large pot, bring water to a boil and blanch the pearl onions for 2 minutes. Drain and set aside.

  2. In a separate saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes until lightly golden.

  3. Gradually whisk in the milk and cream until smooth. Cook for 5 minutes, stirring constantly, until the sauce thickens.

  4. Add the blanched pearl onions to the sauce and stir to coat. Simmer for 10 minutes, or until the onions are tender.

  5. Season with salt and pepper to taste. Remove from heat and garnish with chopped parsley before serving.
