How To Make 3-Cheese Enchiladas Recipe

- 8 tortillas
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1 cup shredded Monterey Jack cheese
- 1 onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 tbsp vegetable oil
- 1 tsp chili powder
- 1 tsp cumin
- 1 can (14 oz) enchilada sauce
- Salt and pepper, to taste
- Optional toppings: sour cream, sliced avocado, chopped cilantro
Instructions

Preheat the oven to 375°F (190°C).

In a large skillet, heat the vegetable oil over medium heat. Add the diced onion, bell pepper, and minced garlic. Cook until the vegetables are soft and translucent.

Add the chili powder, cumin, and salt and pepper to the skillet. Stir well to combine.

Pour half of the enchilada sauce into the bottom of a baking dish.

In a separate bowl, mix together the shredded cheddar, mozzarella, and Monterey Jack cheeses.

Take a tortilla and fill it with a spoonful of the vegetable mixture and a handful of the cheese mixture. Roll up the tortilla tightly and place it seam-side down in the baking dish. Repeat with the remaining tortillas.

Pour the remaining enchilada sauce over the rolled tortillas, making sure to cover them completely.

Sprinkle the remaining cheese mixture on top of the enchiladas.

Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.

Serve hot with optional toppings like sour cream, sliced avocado, and chopped cilantro.
