  • 2 cups almond flour
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup erythritol (sugar substitute)
  • 1/4 cup melted coconut oil
  • 1/4 cup unsweetened applesauce
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a round cake pan.

  2. In a mixing bowl, whisk together almond flour, cocoa powder, erythritol, baking powder, baking soda, and salt.

  3. In a separate bowl, beat the eggs, then add melted coconut oil, applesauce, and vanilla extract. Mix well.

  4. Gradually add the dry ingredients to the wet ingredients, mixing until well combined.

  5. Pour the batter into the greased pan and smooth the top.

  6. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.

  7. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

  8. Slice and serve.
