Ingredients

  • 1 pound ground turkey
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1/2 cup ketchup
  • 2 tablespoons yellow mustard
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • 4 hamburger buns
  • 1 small celeriac, peeled and julienned
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • Salt and pepper, to taste
  • Optional toppings: pickles, sliced red onions

Instructions

  1. In a large skillet, cook the ground turkey over medium heat until browned. Add the diced onion and minced garlic, cooking until the onion is softened.

  2. In a small bowl, whisk together the ketchup, yellow mustard, apple cider vinegar, Worcestershire sauce, brown sugar, paprika, salt, and pepper. Pour the sauce over the cooked turkey and onion mixture, stirring well to combine. Simmer for 10 minutes to allow the flavors to meld together.

  3. While the sloppy joe mixture simmers, prepare the celeriac slaw. In a medium bowl, combine the julienned celeriac, mayonnaise, Dijon mustard, apple cider vinegar, salt, and pepper. Toss until the celeriac is coated in the dressing.

  4. To assemble the sandwiches, toast the hamburger buns if desired. Spoon the turkey mixture onto the bottom half of each bun. Top with a generous amount of celeriac slaw and any optional toppings. Place the top bun on top and serve immediately.
