How To Make Chicken with Spanish-style Butter Beans

- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 onion, diced
- 3 garlic cloves, minced
- 1 red bell pepper, sliced
- 1 teaspoon paprika
- 1/2 teaspoon cumin
- 1/2 teaspoon dried oregano
- 1/4 teaspoon cayenne pepper
- 1 can (14 oz) diced tomatoes
- 1 can (14 oz) butter beans, rinsed and drained
- 1 cup chicken broth
- Salt and pepper to taste
- Fresh parsley for garnish

Season the chicken breasts with salt and pepper.

Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned on both sides. Remove from the skillet and set aside.

In the same skillet, add the onion, garlic, and red bell pepper. Sauté until the vegetables are softened, about 5 minutes.

Stir in the paprika, cumin, dried oregano, and cayenne pepper. Cook for an additional 1 minute.

Add the diced tomatoes, butter beans, and chicken broth to the skillet. Bring to a simmer.

Return the chicken breasts to the skillet, nestling them into the sauce. Cover and cook for 30 minutes, or until the chicken is cooked through.
