  • 1 lb ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1/2 cup ketchup
  • 1/4 cup tomato paste
  • 1 tbsp brown sugar
  • 1 tbsp Worcestershire sauce
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 4 hamburger buns
  • For the Brussels sprout slaw:
  • 2 cups shredded Brussels sprouts
  • 1/4 cup mayonnaise
  • 2 tbsp apple cider vinegar
  • 1 tbsp honey
  • Salt and pepper to taste


  1. In a large skillet, brown the ground beef over medium heat. Drain any excess grease.

  2. Add the diced onion and minced garlic to the skillet and cook until the onion is softened.

  3. Stir in the ketchup, tomato paste, brown sugar, Worcestershire sauce, chili powder, salt, and pepper. Simmer for 10 minutes.

  4. While the sloppy joe mixture is simmering, prepare the Brussels sprout slaw. In a large bowl, combine the shredded Brussels sprouts, mayonnaise, apple cider vinegar, honey, salt, and pepper. Mix well until the sprouts are coated.

  5. Toast the hamburger buns until golden brown.

  6. To serve, spoon the sloppy joe mixture onto the bottom half of each bun. Top with a generous scoop of the Brussels sprout slaw. Cover with the top half of the bun.
