Ingredients
- 1 lb chicken breast, cut into bite-sized pieces
- 1/4 cup cornstarch
- 1/4 cup vegetable oil
- 1 bell pepper, cut into strips
- 1 onion, diced
- 1 cup pineapple chunks
- 1/4 cup ketchup
- 2 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 2 tablespoons brown sugar
- 1 teaspoon minced garlic
- 1/2 teaspoon ginger powder
- 1/4 cup water
- 1 tablespoon cornstarch (mixed with 2 tablespoons water to make a slurry)
Instructions

In a bowl, coat the chicken pieces with cornstarch until fully coated.

Heat vegetable oil in a large skillet or wok over medium-high heat.

Add the coated chicken pieces and cook until golden brown and cooked through. Remove from the skillet and set aside.

In the same skillet, add the bell pepper, onion, and pineapple chunks. Cook until vegetables are tender.

In a small bowl, whisk together ketchup, soy sauce, rice vinegar, brown sugar, minced garlic, ginger powder, and water. Pour the sauce over the vegetables and stir well.

Return the cooked chicken to the skillet and cook for an additional 2-3 minutes, until everything is heated through.

In a small bowl, mix together cornstarch and water to make a slurry. Add the slurry to the skillet and stir until the sauce has thickened.

Serve the sweet and sour chicken stir fry over rice or noodles.
