For Sauce:

  • 2tbspsoy sauce
  • ¼cupoyster sauce
  • 1tbspbeef broth
  • ½tbspchile-garlic sauce,plus more to taste

For Beef Marinade:

  • 2tbspsoy sauce
  • cupsake,Shaoxing rice wine, or dry sherry
  • 1tbspcornstarch
  • 1lbbeef chuck,flank, or rib steak, sliced thin against the grain

For Stir Fry:

  • 2tbspbeef broth,or water
  • 5⅓tbspvegetable oil,divided
  • 1lbbroccoli,the head cut into florets and the stems peeled and shaved
  • 2tbspunsalted butter
  • salt and ground black pepper,to taste

To Serve:

  • 1cupsteamed rice,per serving

Instructions

Beef Marinade:

  1. In a large bowl, whisk together the wine, cornstarch, and soy sauce.

  2. Add the beef to the bowl, and toss to combine. Set aside and allow the beef to marinade for 20 minutes to 1 hour.

Sauce:

  1. Combine the soy sauce, oyster sauce, beef broth, and chile-garlic sauce in a bowl. Mix until evenly incorporated. Set aside.

Stir Fry:

  1. In a wide skillet or wok, heat 3⅓ tablespoons of oil over high heat. Add the beef to the wok, and sear for 2 minutes until it is browned and crisp and barely cooked through. Set aside.

  2. Return the skillet or wok to the stove over high heat. Heat up the remaining oil. Add the broccoli and sauté for 3 minutes until lightly charred in spots.

  3. Add remaining water or beef broth to the wok, cover, and allow to steam briefly for roughly 3 minutes.

  4. Add the seared beef and prepared sauce. Sauté, stirring frequently, for 30 seconds or so, then add the butter, and stir and toss again for 30 seconds more.

  5. Adjust seasoning to taste.

  6. Serve immediately with rice, and enjoy!
