Ingredients
- 1 lb ground beef
- 1 onion, chopped
- 2 carrots, chopped
- 2 potatoes, peeled and diced
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 2 cups beef broth
- 1 tsp dried thyme
- 1 tsp dried oregano
- Salt and pepper, to taste
Instructions

In a large pot, brown the ground beef over medium heat until cooked through. Drain any excess grease.

Add the chopped onion, carrots, potatoes, and garlic to the pot. Cook for 5 minutes, stirring occasionally.

Stir in the diced tomatoes, beef broth, dried thyme, dried oregano, salt, and pepper. Bring to a boil.
