  • 1 lb ground beef
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 potatoes, peeled and diced
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups beef broth
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • Salt and pepper, to taste

Instructions

  1. In a large pot, brown the ground beef over medium heat until cooked through. Drain any excess grease.

  2. Add the chopped onion, carrots, potatoes, and garlic to the pot. Cook for 5 minutes, stirring occasionally.

  3. Stir in the diced tomatoes, beef broth, dried thyme, dried oregano, salt, and pepper. Bring to a boil.

  4. Reduce heat to low, cover, and simmer for 30-40 minutes, or until the vegetables are tender.

  5. Serve hot and enjoy!
