  • 6 slices of bacon, chopped
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 4 cups of chicken or vegetable broth
  • 1 bunch of watercress, stems removed
  • 1/2 cup of heavy cream
  • Salt and pepper, to taste


  1. In a large pot, cook the bacon over medium heat until crispy. Remove the bacon from the pot and set aside, leaving the bacon fat in the pot.

  2. Add the chopped onion to the pot and cook until softened, about 5 minutes. Add the minced garlic and cook for another minute.

  3. Pour in the chicken or vegetable broth and bring to a boil. Reduce heat to low and simmer for 10 minutes.

  4. Add the watercress to the pot and simmer for another 5 minutes, until wilted.

  5. Using an immersion blender or regular blender, puree the soup until smooth.

  6. Return the soup to the pot and stir in the heavy cream. Season with salt and pepper to taste.

  7. In a separate saucepan, bring water to a boil. Form small dumplings from the chopped bacon and drop them into the boiling water. Cook for about 5 minutes, until the dumplings float to the top.

  8. Ladle the soup into bowls and top with the bacon dumplings. Serve hot.
