How To Make Pea & Watercress Soup

Serves:

Ingredients

  • 2 cups of peas
  • 1 bunch of watercress, roughly chopped
  • 1 medium onion, chopped
  • 2 cloves of garlic, minced
  • 4 cups of vegetable broth
  • 1 tablespoon of olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion and garlic and sauté until softened.

  2. Add the peas and watercress to the pot and cook for a few minutes, until slightly wilted.

  3. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for about 10 minutes, until the peas are tender.

  4. Remove the pot from the heat and let it cool slightly. Then, using a blender or an immersion blender, puree the soup until smooth.

  5. Return the soup to the pot and season with salt and pepper to taste. Cook for an additional 5 minutes, until heated through.

  6. Serve hot and enjoy!
