How To Make Pea & Watercress Soup

Ingredients
- 2 cups of peas
- 1 bunch of watercress, roughly chopped
- 1 medium onion, chopped
- 2 cloves of garlic, minced
- 4 cups of vegetable broth
- 1 tablespoon of olive oil
- Salt and pepper to taste
Instructions

In a large pot, heat the olive oil over medium heat. Add the onion and garlic and sauté until softened.

Add the peas and watercress to the pot and cook for a few minutes, until slightly wilted.

Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for about 10 minutes, until the peas are tender.

Remove the pot from the heat and let it cool slightly. Then, using a blender or an immersion blender, puree the soup until smooth.

Return the soup to the pot and season with salt and pepper to taste. Cook for an additional 5 minutes, until heated through.
