Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup warm water
  • 2 cups mashed potatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced cooked bacon
  • 1/4 cup diced onion
  • Salt and pepper to taste
  • Sour cream (for serving)

Instructions

  1. In a large mixing bowl, combine the flour and salt. Gradually add the warm water and mix until the dough comes together.

  2. Knead the dough on a floured surface for about 5 minutes, or until smooth and elastic.

  3. Divide the dough into 4 equal portions and roll each portion into a thin circle.

  4. In a separate bowl, mix together the mashed potatoes, cheddar cheese, diced bacon, diced onion, salt, and pepper.

  5. Place a spoonful of the potato filling onto one half of each dough circle, leaving a border around the edges.

  6. Fold the other half of the dough over the filling and press the edges together to seal.

  7. Bring a large pot of salted water to a boil. Carefully drop the perogies into the boiling water and cook for about 3-4 minutes, or until they float to the surface.

  8. Remove the cooked perogies from the water using a slotted spoon and transfer to a serving dish.

  9. Serve hot with sour cream.
