How To Make Turkey Soup with Potato Dumplings
Potato dumplings filled with herbs and creamy mashed potatoes are cooked to perfection and then served on top of a turkey broth for a comforting soup.
Serves:
Ingredients
- 1onion,chopped
- 1tbspolive oil
- 8cupsturkey broth,or chicken broth
- 3cupsmixed vegetables
- 2cupscooked turkey,chopped
- ½tsppoultry seasoning
For Potato Dumplings:
- 1pckgBob Evans Garlic Mashed Potatoes
- 1½cupsall purpose flour
- 1½tspbaking powder
- 1tbspfresh parsley
- salt to taste
- 1large egg
Instructions

Cook onion in olive oil over medium heat for about 4 minutes or until softened.

Add remaining soup ingredients and simmer for 15 minutes.

Meanwhile combine all dumpling ingredients in a medium bowl and mix well with a fork to form a dough. The dough should be fairly soft but not watery.

While the soup is boiling drop the dough by heaping tablespoons onto the top of the soup. Simmer for about 7 minutes or until they float to the top.

Remove with a slotted spoon and repeat with remaining dumplings.

To serve, place dumplings in the bottom of a soup bowl and ladle soup overtop.
