  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup water
  • 4 cups mashed potatoes
  • 1/2 cup grated cheddar cheese
  • 1/4 cup chopped green onions
  • 1/4 cup butter
  • Sour cream, for serving

Instructions

  1. In a large mixing bowl, combine the flour and salt. Gradually add water and mix until a dough forms. Knead the dough for about 5 minutes until smooth.

  2. Roll out the dough on a floured surface until it is about 1/8 inch thick.

  3. Using a round cookie cutter or a glass, cut out circles from the dough.

  4. In a separate bowl, mix together the mashed potatoes, cheddar cheese, and green onions.

  5. Place a spoonful of the potato mixture onto each dough circle. Fold the dough in half to form a half-moon shape and pinch the edges to seal.

  6. Bring a large pot of salted water to a boil. Drop the perogies in and cook for about 5-7 minutes until they float to the surface.

  7. In a skillet, melt the butter over medium heat. Add the cooked perogies and cook for an additional 2-3 minutes on each side until golden brown.

  8. Serve hot with sour cream.
