How To Make Chipotle Sweet Potato & Black Bean Stew with Cheddar Dumplings

Ingredients
- 2 tbsp vegetable oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 chipotle pepper in adobo sauce, diced
- 1 tsp ground cumin
- 1 tsp dried oregano
- 2 sweet potatoes, peeled and diced
- 1 can black beans, rinsed and drained
- 4 cups vegetable broth
- Salt and pepper, to taste
- For the cheddar dumplings:
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup shredded cheddar cheese
- 1/4 cup milk
- 2 tbsp melted butter
Instructions

In a large pot, heat the vegetable oil over medium heat. Add the diced onion and minced garlic, and cook until softened.

Add the diced chipotle pepper, ground cumin, and dried oregano to the pot, and cook for an additional minute.

Add the diced sweet potatoes, black beans, and vegetable broth to the pot. Season with salt and pepper.

Increase the heat to high and bring the stew to a boil. Then, reduce the heat to low, cover the pot, and simmer for 20-25 minutes, or until the sweet potatoes are tender.

While the stew is simmering, prepare the cheddar dumplings. In a mixing bowl, combine the flour, baking powder, and salt. Stir in the shredded cheddar cheese. Then, add the milk and melted butter, and stir until just combined.

Once the sweet potatoes are tender, drop spoonfuls of the dumpling batter onto the surface of the stew.

Cover the pot and cook for an additional 15 minutes, or until the dumplings are cooked through.
