How To Make Sweet Potato and Apple Soup
Hearty and flavorful, you’ll be wanting seconds of this apple soup for your next side, that’s loaded with sweet potatoes, tender apples, parsnips!

Ingredients
- 1¾lbsweet potatoes
- 1small parsnip
- 2garlic cloves
- 2tbspextra-virgin olive oil
- salt,to taste
- 6cupsvegetable stock,or low-sodium broth
- 1dashapple cider
- 1tspgreen Tabasco sauce
- Granny Smith apple,finely diced
- parsley,minced
Instructions

Preheat the oven to 375 degrees F,

On a baking sheet, toss the sweet potatoes with parsnip, garlic, olive oil, and salt.

Bake for 45 minutes, or until tender.

In a blender, puree ½ of the vegetables with 3 cups of the stock. Transfer to a large saucepan. Repeat with the remaining vegetables and stock.

Add the apple cider and Tabasco, and heat through. Season with salt.

Serve with the diced apple and minced parsley, and enjoy!
