How To Make Smoked-Sausage, Cabbage and Potato Soup

Enjoy a hearty warm bowl of potato soup with smoked sausage, cabbage, and baking potatoes, packed with earthy herbs, for a belly-filling meal!

Serves:

Ingredients

  • 2tbspcooking oil
  • 1onion
  • lbsgreen cabbage,(about ½ head)
  • 1lbbaking potatoes,(about 2 potatoes)
  • 4cupswater
  • 2cupchicken broth,low-sodium
  • 1bay leaf
  • tspdried thyme
  • tspsalt
  • ¾lbsmoked sausage

Instructions

  1. In a large pot, heat the oil over moderately low heat. Add the onion. Cook, stirring occasionally, for about 5 minutes until translucent.

  2. Add the cabbage, potatoes, water, broth, bay leaf, thyme, and salt to the pot. Bring to a boil.

  3. Reduce the heat and simmer, partially covered, stirring occasionally, for about 20 minutes until the cabbage and potatoes are tender.

  4. Put a large nonstick frying pan over moderate heat. Add the sausage and cook, stirring occasionally, for 2 to 3 minutes until browned. Remove the sausage from the pan and drain on paper towels.

  5. Just before serving, remove the bay leaf from the soup and stir in the sausage.

  6. Serve warm, and enjoy!

Recipe Notes

  • Variation suggestion: In a separate pan, cook ¾ of a pound of sausage links, cut into slices, and stir them into the soup instead of the smoked sausage.
