  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground turmeric
  • 1/4 teaspoon cayenne pepper (optional, adjust to taste)
  • 1 can (400g) diced tomatoes
  • 1 can (400g) cooked chickpeas, drained and rinsed
  • 1/2 cup red lentils
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)
  • Lemon wedges (for serving)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion, garlic, carrot, and celery, and sauté until softened, about 5 minutes.

  2. Add the cumin, coriander, ginger, cinnamon, turmeric, and cayenne pepper. Stir well to coat the vegetables with the spices.

  3. Add the diced tomatoes, chickpeas, red lentils, and vegetable broth. Season with salt and pepper to taste.

  4. Bring the soup to a boil, then reduce heat to low and let it simmer for about 45 minutes to 1 hour, until the lentils are cooked and the flavors have melded together.

  5. Serve the soup hot, garnished with fresh cilantro and a squeeze of lemon juice. Enjoy!
