Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1 lb okra, sliced
  • 1 onion, diced
  • 1 green bell pepper, diced
  • 2 stalks celery, diced
  • 4 cloves garlic, minced
  • 1 can diced tomatoes
  • 4 cups chicken broth
  • 2 tbsp vegetable oil
  • 2 tbsp all-purpose flour
  • 1 tbsp Cajun seasoning
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • Cooked rice for serving

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the flour and cook, stirring constantly, until the mixture turns golden brown, about 5 minutes.

  2. Add the onion, bell pepper, celery, and garlic to the pot. Cook until the vegetables are softened, about 5 minutes.

  3. Stir in the diced tomatoes, chicken broth, Cajun seasoning, and dried thyme. Bring to a simmer and cook for 15 minutes.

  4. Add the shrimp and okra to the pot and cook until the shrimp are pink and cooked through, about 5 minutes.

  5. Season with salt and pepper to taste. Serve the gumbo hot over cooked rice.
