Ingredients
- 1 lb shrimp, peeled and deveined
- 1 lb okra, sliced
- 1 onion, diced
- 1 green bell pepper, diced
- 2 stalks celery, diced
- 4 cloves garlic, minced
- 1 can diced tomatoes
- 4 cups chicken broth
- 2 tbsp vegetable oil
- 2 tbsp all-purpose flour
- 1 tbsp Cajun seasoning
- 1 tsp dried thyme
- Salt and pepper to taste
- Cooked rice for serving
Instructions

In a large pot, heat the vegetable oil over medium heat. Add the flour and cook, stirring constantly, until the mixture turns golden brown, about 5 minutes.

Add the onion, bell pepper, celery, and garlic to the pot. Cook until the vegetables are softened, about 5 minutes.

Stir in the diced tomatoes, chicken broth, Cajun seasoning, and dried thyme. Bring to a simmer and cook for 15 minutes.

Add the shrimp and okra to the pot and cook until the shrimp are pink and cooked through, about 5 minutes.
