  • 1 can (14.75 oz) pink salmon, drained
  • 1/4 cup onion, finely chopped
  • 1/4 cup red bell pepper, finely chopped
  • 1/4 cup celery, finely chopped
  • 1/4 cup mayonnaise
  • 1 tbsp Dijon mustard
  • 2 tbsp fresh parsley, chopped
  • 1/2 cup breadcrumbs
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • Cooking spray

Instructions

  1. Preheat the air fryer to 400°F (200°C).

  2. In a bowl, combine the drained salmon, onion, red bell pepper, celery, mayonnaise, Dijon mustard, fresh parsley, breadcrumbs, salt, and black pepper. Mix well until everything is evenly incorporated.

  3. Shape the mixture into patties, about 3 inches in diameter and 1/2 inch thick.

  4. Spray the air fryer basket with cooking spray. Place the salmon croquettes in the basket, ensuring they are not touching each other.

  5. Cook in the air fryer for 12-15 minutes, flipping halfway through, until the croquettes are golden brown and cooked through.

  6. Serve hot as an appetizer or main dish with your favorite dipping sauce.
