How To Make Moroccan Chickpea Bean Soup Recipe
A hearty soup with a blend of Moroccan spices and nutritious chickpeas
Serves:
Ingredients
- 2 tbsp olive oil
- 1 onion, diced
- 3 garlic cloves, minced
- 2 tsp Moroccan spice mix
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp chili flakes
- 2 cups vegetable broth
- 1 can diced tomatoes
- 2 cans chickpeas, drained and rinsed
- 1 lemon, juiced
- Salt and pepper to taste
- Chopped fresh cilantro for garnish
Instructions

Heat olive oil in a large pot over medium heat.

Add diced onion and minced garlic and sauté for 3-4 minutes until softened.

Add the Moroccan spice mix, cumin, coriander, and chili flakes. Cook for an additional 1-2 minutes to toast the spices.

Pour in the vegetable broth, diced tomatoes, and chickpeas. Bring to a simmer and cook for 15 minutes.

Add lemon juice and salt and pepper to taste.

Serve hot with chopped fresh cilantro as garnish.
