Ingredients

  • 2 tbsp olive oil
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 2 tsp Moroccan spice mix
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp chili flakes
  • 2 cups vegetable broth
  • 1 can diced tomatoes
  • 2 cans chickpeas, drained and rinsed
  • 1 lemon, juiced
  • Salt and pepper to taste
  • Chopped fresh cilantro for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.

  2. Add diced onion and minced garlic and sauté for 3-4 minutes until softened.

  3. Add the Moroccan spice mix, cumin, coriander, and chili flakes. Cook for an additional 1-2 minutes to toast the spices.

  4. Pour in the vegetable broth, diced tomatoes, and chickpeas. Bring to a simmer and cook for 15 minutes.

  5. Add lemon juice and salt and pepper to taste.

  6. Serve hot with chopped fresh cilantro as garnish.
