How To Make African Moroccan Lentil Soup Recipe

Serves:

Ingredients

  • 1 cup of red lentils
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1 tbsp of ginger, grated
  • 1 tsp of cumin
  • 1 tsp of paprika
  • ¼ tsp of cinnamon
  • 4 cups of vegetable broth
  • 1 can of diced tomatoes
  • Salt and pepper to taste
  • Fresh cilantro, chopped for garnish

Instructions

  1. Rinse lentils and set aside.

  2. In a pot over medium heat, sauté onion and garlic until softened.

  3. Add in carrots, celery, and ginger and sauté for 5 minutes.

  4. Add in spices and stir well.

  5. Pour in vegetable broth, diced tomatoes, and lentils. Bring to a boil, then reduce heat and let simmer for 45 minutes or until lentils are tender.

  6. Season with salt and pepper to taste.

  7. Serve hot, garnished with fresh cilantro.
