How To Make African Moroccan Lentil Soup Recipe
A hearty and flavorful soup made with lentils, veggies, and African-inspired spices.
Serves:
Ingredients
- 1 cup of red lentils
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 carrot, diced
- 1 celery stalk, diced
- 1 tbsp of ginger, grated
- 1 tsp of cumin
- 1 tsp of paprika
- ¼ tsp of cinnamon
- 4 cups of vegetable broth
- 1 can of diced tomatoes
- Salt and pepper to taste
- Fresh cilantro, chopped for garnish
Instructions

Rinse lentils and set aside.

In a pot over medium heat, sauté onion and garlic until softened.

Add in carrots, celery, and ginger and sauté for 5 minutes.

Add in spices and stir well.

Pour in vegetable broth, diced tomatoes, and lentils. Bring to a boil, then reduce heat and let simmer for 45 minutes or until lentils are tender.

Season with salt and pepper to taste.

Serve hot, garnished with fresh cilantro.
