  • 1 lb boneless, skinless chicken thighs, cut into small pieces
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 tbsp ginger, grated
  • 4 cups chicken broth
  • 3 tbsp miso paste
  • 1 cup cooked rice
  • 2 green onions, sliced
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • Salt and pepper to taste


  1. In a large pot, heat some oil over medium heat. Add the chicken and cook until browned. Remove from the pot and set aside.

  2. In the same pot, add the onion, garlic, and ginger. Cook until the onion is translucent.

  3. Add the chicken broth to the pot and bring to a boil. Reduce heat to simmer.

  4. In a small bowl, whisk together the miso paste with a little bit of the broth until smooth. Add the miso mixture to the pot and stir well.

  5. Return the chicken to the pot and let it cook for another 15 minutes, or until the chicken is cooked through.

  6. Stir in the cooked rice, green onions, soy sauce, sesame oil, salt, and pepper. Cook for an additional 5 minutes.

  7. Serve hot and enjoy!
