How To Make Teriyaki Chicken Meatballs with Rice & Greens

Ingredients
- 1 lb ground chicken
- 1/4 cup breadcrumbs
- 2 green onions, finely chopped
- 1 garlic clove, minced
- 1/4 cup soy sauce
- 2 tbsp honey
- 1 tbsp rice vinegar
- 1 tbsp sesame oil
- 1 cup cooked rice, for serving
- 2 cups mixed greens, for serving
- sesame seeds, for garnish

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

In a large mixing bowl, combine ground chicken, breadcrumbs, green onions, and garlic. Mix well until all ingredients are evenly incorporated.

Shape the mixture into meatballs, about 1 inch in diameter, and place them on the prepared baking sheet.

In a small bowl, whisk together soy sauce, honey, rice vinegar, and sesame oil. Pour the teriyaki sauce over the meatballs, making sure they are well coated.
