  • 1 lb ground chicken
  • 1/4 cup breadcrumbs
  • 2 green onions, finely chopped
  • 1 garlic clove, minced
  • 1/4 cup soy sauce
  • 2 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 cup cooked rice, for serving
  • 2 cups mixed greens, for serving
  • sesame seeds, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

  2. In a large mixing bowl, combine ground chicken, breadcrumbs, green onions, and garlic. Mix well until all ingredients are evenly incorporated.

  3. Shape the mixture into meatballs, about 1 inch in diameter, and place them on the prepared baking sheet.

  4. In a small bowl, whisk together soy sauce, honey, rice vinegar, and sesame oil. Pour the teriyaki sauce over the meatballs, making sure they are well coated.

  5. Bake the meatballs in the preheated oven for 20-25 minutes, or until they are cooked through and nicely browned.

  6. While the meatballs are cooking, prepare your rice according to package instructions and toss the mixed greens in a bowl.

  7. Serve the teriyaki chicken meatballs over a bed of rice and greens. Garnish with sesame seeds.
