Ingredients

  • 1 1/2 cups saltfish, cooked and shredded
  • 1 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp black pepper
  • 1 small onion, finely chopped
  • 1 small scotch bonnet pepper, seeded and finely chopped
  • 1 green onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 2 cloves garlic, minced
  • 2 eggs, beaten
  • Vegetable oil, for frying
  • Salt, to taste

Instructions

  1. In a large bowl, combine the flour, baking powder, and black pepper.

  2. Add the shredded saltfish, onion, scotch bonnet pepper, green onion, parsley, and garlic to the bowl. Mix well.

  3. Gradually add the beaten eggs to the mixture, stirring until the batter is well combined.

  4. Heat vegetable oil in a deep skillet or frying pan over medium-high heat.

  5. Drop spoonfuls of the batter into the hot oil, frying until golden brown and crispy, about 3-4 minutes per side.

  6. Remove fritters from the oil and place on a paper towel-lined plate to drain excess oil.

  7. Serve hot as an appetizer or snack with a side of spicy dipping sauce.
