Ingredients

  • 4 sausages
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1 can of butter beans, drained and rinsed
  • 1 can of diced tomatoes
  • 2 cups of vegetable broth
  • 1 tsp of dried thyme
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. In a large pot, cook the sausages over medium heat until browned on all sides. Remove from the pot and set aside.

  2. In the same pot, add the diced onion, garlic, carrot, and celery. Cook until the vegetables are softened, about 5 minutes.

  3. Add the butter beans, diced tomatoes, vegetable broth, dried thyme, salt, and pepper to the pot. Stir well.

  4. Return the sausages to the pot and bring to a simmer. Cover and cook for 30 minutes, or until the sausages are cooked through and the stew has thickened slightly.

  5. Serve the sausage and butter bean stew hot, garnished with fresh parsley.
