Ingredients
- 1 lb Louisiana crawfish tails, peeled
- 1/4 cup butter
- 1 onion, chopped
- 1 green bell pepper, chopped
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 2 tbsp tomato paste
- 4 cups seafood stock
- 1 cup heavy cream
- 1 tsp Cajun seasoning
- Salt and pepper to taste
- 2 green onions, chopped (for garnish)
- Cooked white rice (for serving)
Instructions

In a large pot, melt the butter over medium heat. Add the onion, bell pepper, celery, and garlic. Cook until the vegetables are soft and translucent, about 5 minutes.

Stir in the tomato paste and cook for another minute.

Add the crawfish tails to the pot and cook for 2-3 minutes, until heated through.

Pour in the seafood stock and bring to a simmer. Cook for 20 minutes.

Use an immersion blender or transfer the mixture to a blender to puree until smooth.

Return the bisque to the pot and stir in the heavy cream and Cajun seasoning. Season with salt and pepper to taste.

Simmer the bisque for another 10 minutes to allow the flavors to blend together.
