Ingredients

  • 4 herby sausages
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 2 cans butter beans, drained and rinsed
  • 1 cup chicken or vegetable broth
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Place the sausages on a baking sheet and bake for 20-25 minutes, or until cooked through.

  3. Meanwhile, heat the olive oil in a large skillet over medium heat.

  4. Add the onion and garlic and sauté until softened, about 5 minutes.

  5. Stir in the dried thyme and rosemary.

  6. Add the butter beans and broth to the skillet and bring to a simmer.

  7. Cook for 10 minutes, until the beans are heated through and slightly softened.

  8. Using a potato masher or fork, mash the beans until creamy. Season with salt and pepper to taste.

  9. Serve the herby sausages with a generous portion of the butter bean mash.

  10. Garnish with freshly chopped parsley.
