How To Make Herby Sausages with Butter Bean Mash
A flavorful dish featuring herby sausages served with creamy butter bean mash.

Ingredients
- 4 herby sausages
- 2 tbsp olive oil
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 2 cans butter beans, drained and rinsed
- 1 cup chicken or vegetable broth
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions

Preheat the oven to 400°F (200°C).

Place the sausages on a baking sheet and bake for 20-25 minutes, or until cooked through.

Meanwhile, heat the olive oil in a large skillet over medium heat.

Add the onion and garlic and sauté until softened, about 5 minutes.

Stir in the dried thyme and rosemary.

Add the butter beans and broth to the skillet and bring to a simmer.

Cook for 10 minutes, until the beans are heated through and slightly softened.

Using a potato masher or fork, mash the beans until creamy. Season with salt and pepper to taste.

Serve the herby sausages with a generous portion of the butter bean mash.

Garnish with freshly chopped parsley.
