How To Make Crockpot Beef Stew Recipe

A comforting, hearty beef stew filled with vegetables and tender beef cooked to perfection in a slow cooker.

Total: 8 hours and 20 minutes on low or 4 hours and 20 minutes on high

Serves:

Ingredients

  • 1 ½ lbs. beef stew meat, cut into 1-inch cubes
  • 4 cups beef broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 3 potatoes, peeled and cubed
  • 3 carrots, peeled and sliced
  • 1 cup frozen peas
  • 1 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp cornstarch
  • 2 tbsp water

Instructions

  1. In a slow cooker, add beef, beef broth, onion, garlic, potatoes, carrots, peas, tomato paste, thyme, salt and pepper.

  2. Cover and cook on low for 8 hours or on high for 4 hours, until beef is tender.

  3. In a small bowl, stir together cornstarch and water until smooth.

  4. Stir cornstarch mixture into the stew and cook on high for an additional 30 minutes, or until the sauce has thickened.
