How To Make Beef & Guinness Stew with Bacon Dumplings

Ingredients
- 1.5 pounds stewing beef, cut into chunks
- 1 onion, diced
- 4 cloves of garlic, minced
- 2 carrots, peeled and sliced
- 2 celery stalks, sliced
- 2 tablespoons tomato paste
- 1 cup Guinness beer
- 3 cups beef broth
- 2 sprigs fresh thyme
- 2 bay leaves
- Salt and pepper, to taste
- 4 slices of bacon, chopped
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 cup unsalted butter, cold and diced
- 1/2 cup milk
Instructions

In a large pot, heat some oil over medium heat. Add the beef chunks and brown them on all sides. Remove the beef from the pot and set aside.

In the same pot, add the diced onion and minced garlic. Cook until the onion becomes translucent.

Add the tomato paste and cook for another minute, stirring constantly.

Return the beef to the pot and add the sliced carrots, celery, Guinness beer, beef broth, thyme, and bay leaves. Season with salt and pepper to taste.

Bring the stew to a boil, then reduce the heat to low. Cover the pot and simmer for about 2 hours or until the beef is tender.

While the stew is simmering, prepare the bacon dumplings. In a bowl, combine the flour, baking powder, and salt. Add the diced butter and use your fingers to rub it into the flour mixture until it resembles coarse breadcrumbs.

Stir in the chopped bacon and milk until just combined. Be careful not to overmix.

Once the beef is tender, drop spoonfuls of the dumpling mixture onto the surface of the stew. Cover the pot and cook for an additional 20-30 minutes until the dumplings are cooked through.
