How To Make Creamy Asparagus Soup

Comfort in a bowl is the best way to describe this asparagus soup. The parmesan and cream add a nice richness to this hearty and healthy dish.

Ingredients

  • 1 ½lbsasparagustrimmed and washed
  • 1tbspbutter
  • 1smalloniondiced
  • 1garlic cloveminced
  • 2 ¼cupschicken brothnot low sodium
  • salt & black pepperto taste
  • ½tsplemon juicefresh
  • ½cupheavy creamor to taste
  • parmesan cheesefor serving, optional

Instructions

  1. Cut asparagus into ½-inch pieces.

  2. Cook onion and garlic in butter over medium heat until tender.

  3. Add asparagus and cook for an additional 5 minutes.

  4. Stir in broth, salt, and pepper. Cover and let simmer for 10 to 15 minutes or until asparagus is softened.

  5. Using a hand blender, puree soup until smooth. Stir in cream and lemon juice.

  6. Taste and season with salt and pepper if needed.
